More appropriately, the entity feeds on hope to create despair. It relies on killers to catch its prey by consuming the hope of escape and replacing it with the despair of being hooked.

I'm a survivor who wants to be killed either because A) the killer was better than me, or B ) I did some dumb stuff and deserved it or C) I tbagged a killer a little too hard. I don't want to die from a killer face-camping my hook, or from my team stranding me by way of DC. And WHY WONT YOU LET ME BURN GLASSES YOU PEONS

Fun fact, guys--while it's not illegal to show the death of children in a video game or film, it does cause the rating to go up and can greatly impact sales. That's why in most games where children can die (Telltale's TWD, Detroit: Become Human, Heavy Rain for examples), its not shown on-screen. On top of that, sales would be impacted in countries with higher censorship laws, such as Australia. It's an issue of morality.
On a lore basis, I like to think the Entity is incapable of eating children simply because they're too hard to catch. Outside of its realm, hope is a repellent, and children are especially hopeful. It's harder for a child to truly despair, even at the worst of times.

In all seriousness, the Entity feeds on hope. Probably as with any good predator, they'd let the relationship build to compound hope and then feed on it by probably permakilling one.

Given that the other survivors were abducted due to lack of hope, Kate was taken for No Reason and it doesn't really mesh well with the other survivors' stories or the feel of the game. tl;dr old man yells at cloud because bad lore
