The higher is probably a typo
Maybe this whole time there's been a level above Iridescent we didn't know about?

No, it means Iridescent. The UI designers probably just used their "Earn # Emblems of X quality or higher" template that they used for other similar challenges, and didn't pay enough attention to how much sense it made in this particular instance. In other words, the wording is probably just an oversight.
