You can still keep at it, you just won't get any Rift Fragments

All the lore you unlock through the Tome will still be there for you to reread and enjoy after the Rift closes. There is no expiration date on the Tome - even after the Rift closes, the Tome will stay around forever and you will be able to earn rewards, including lore, through it indefinitely.

The only exception, as @DeKillerKiller mentioned, is Rift Fragments, which will only be rewarded for completing Tome challenges as long as the associated Rift is open.

You can also go back to the tome and get said lore anytime you with, the only thing that changes is the rewards in each new Rift.

    That's about it...
