I had a problem when it came to DBD's volume always starting at the same volume despite me changing it all the time. So this could be your solution (if your on PC):
Find your dead by daylight GameUserSettings.ini file (Google it if you don't know how to find it). Right click on it, click "Properties" and on the General tab you'll see "Read-only" at the bottom. Uncheck it if it's checked. If "Read-only" isn't checked, I'm not sure what your problem is. Now when you change the option again in-game and restart you should have no issues.
