Yeah, it's as Mooks said. If you don't enjoy it, quit for a month and then return. Call it a dopamine detox if you wish. I became fed up with many games in the past and leaving for a bit is the most helpful path to take. You can also try meme builds those taking a break might be better.

I think the simplest solution would be to make X number of hooks considered a win. After getting enough hooks, like 8 or 9, the Killer autowins. Though this could make sabo builds more prevalent.

While this is an intriguing idea, I think it would make the gen rush even worse. Yeah, there's the risk of failing the skillchecks and trolling your teammates in the process but SWFs would abuse the hell out of it. Imagine 4 Survivors bringing this Perk and succeeding. It's just too game-breaking.

Yeah in the current state, Killers must camp and tunnel to win at high MMR. It's sad but who knows where it's gonna be addressed. This is especially true for weaker Killers who don't have much to work with. DS just isn't reliable anymore to counter this.

Demogorgon is a bit unique in that he can adopt multiple playstyles. You can look up his OP builds here. He excels at basement builds thanks to his portal. He also handles the Devour build better than other Killers for the same reason. But I think STBFL is the must-have perk for him in most of his builds. He can preserve stacks really well with shred and gets a lot of value from it.

Your Doctor build is really effective since he is so good at pushing people off gens and preventing them from doing them. Apart from skillcheck Terror Radius builds, you can also go stealth Doctor. With Insidious, you can sit next to a gen and pretend you're an illusion. It's so funny when Survivors fall for this.
You can also go for Exposed builds like those in here. With your big Terror Radius, you can get some value from Starstruck. You can also protect Devour totems to an extent.

There are many good Pyramid Head builds out there. I think the core Perks for him are I'm All Ears and Lethal Pursuer. This is because they help you land your power in chases more often. For the rest of them, you can throw in some slowdown like Deadlock or No Way Out. Pain Rez isn't as good since your cages don't synergize with it at all. You can find inspiration here. Some of his builds are really unique, such as Plaything/Tinkerer builds.

The reason is simple. He is a strong Killer, A-Tier but he isn't broken. Thus, Survivors feel challenged but not oppressed. That's why they like versing him so much.
As for Killers, it's his kit. Most players like mechanical Killers and Wesker's Power certainly needs skill. And then there is the psychological satisfaction of slamming Survivors against walls. He also has so many viable builds and playstyles as you can see here.
And lastly, it's because next to every loved the early RE games. BHVR was smart to capitalize on this.

I love playing Sadako. Her kit is unique and the jumpscare and hit-and-run playstyle has been my favorite since I discovered the game. What I think makes Sadako so bad are the boons and DH. You rely on setting up ambushes rather than on chases. These perks counter this hard. But some builds, like those here, can help her do better. Plaything and other Undetectable perks can work wonders on her.
But yeah, she is pretty weak. Maybe the condemned part should be buffed?

It's surprising you think Pig is the worst Killer. Sure, she is nowhere near the best but she certainly isn't the worst. Clown, Sadako, and Hag all struggle more in this Meta, especially due to boons. Maybe you haven't found the right build for her yet? You can look here for inspiration. If you pair STBFL with slowdown perks, I reckon she can be quite oppressive to vers.

I've done the same about a month ago. I might return to the game eventually but I needed the break so badly. The game can be very bad and frustrating at times for reasons listed here. Some of the issues are slowly getting resolved albeit painfully slowly. But I guess what makes the game the most unfun for me is repetition. Thus, I don't think it's healthy to play it for hours at length. Just one or two matches are enough.
Anyway, good luck with your quitting journey and hopefully you'll stick by your decision (unless you really wish to return.)

I think you should play to have fun/to improve rather than to win. This is true for any game, not just DbD. I used to have the same issue until one day I decided to play Killer even if I was bad. You won't ever get better unless you play Killer over and over.
